Ashley Richardson


Ashley is the Assistant Director of Nutrition for Dining Services.  She is responsible for providing nutritional guidance and advice to all students on campus with a focus on accommodating those with allergens, intolerances, and eating disorders.

She works independently as a member of the Dining Services Administrative team to assess and audit nutritional information and ingredients of all operational units, including catering, production kitchens, quick services, fast casual, all-you-care-to-eat locations, and regional food service locations.  She evaluates the menu mix across all platforms and works with the Corporate Executive Chef to enhance nutritional values, create balanced menu offerings, and ensure a more allergen friendly, vegetarian, and plant-based menu mix. 

Ashley is also a member of the Buckeye Wellness Innovators program and is responsible for planning, implementing, and evaluating wellness programs for both students and Dining Services' staff.  She coordinates and conducts wellness and allergen training as well. 

She received her Bachelors of Exercise Science from Wingate University and her Master’s Degree in Dietetics from The Ohio State University.  Her prior experiences include implementing menu management software and working as a foodservice dietitian for special populations.
